Managing director Jason Adams tells us more about what makes dining at Rockliffe so special.
Tell us about the dining experiences at Rockliffe Hall
Our ever-changing menus feature a huge variety of dishes carefully crafted using the finest, seasonal produce. From quintessential British classics like Afternoon Tea in the historic Old Hall or a traditional Sunday lunch in the relaxed atmosphere of The Clubhouse, to healthy Asian-inspired dishes in Nu Sana or award-winning fare in our fine dining restaurant; there are endless culinary opportunities to take advantage of at Rockliffe Hall. And with three on-resort restaurants plus lighter dining options available, you definitely won’t go hungry!
Sourcing products directly from the estate as well as surrounding areas is a real highlight of your menus, why is sustainability and provenance so important?
At Rockliffe Hall we are passionate about using seasonal ingredients, while keeping sustainability at the forefront of our menu choices. Many of the dishes on the menus in our fine dining restaurant use ingredients grown in our Walled Garden, foraged elsewhere within the estate or sourced as ethically and locally as possible. We also aim to waste as little as possible when considering the produce we select and try to carry our ethos around sustainability, seasonality and locality through everything we do in the kitchen.
How do you choose the suppliers you work with?
We aim, where possible, to locally source the best available products. So we identify and organise meetings with local suppliers, visit their premises, taste test the product and then we make a decision taking all of those things into account. But ultimately it will be about quality and those who uphold the absolute highest standards.
What is it that makes the Tees Valley producers you use so special?
The quality of the products is just excellent. We are in an area that not only has some of the best agricultural land in the UK, but is also within striking distance of the coast and so extremely fresh produce is within easy reach. This not only means it’s super fresh and of an extremely high quality, but from a sustainability perspective the food miles are far fewer than produce being brought in from further afield.
